I agree that this is a booming business, some of the most successful in NYC hv been brick and mortar establishments that put a truck in a different neighborhood (i.e. a Brooklyn restaurant parking a truck in midtown Manhattan).  This will definetly impact Jacksonville as the urban core grows, as long as city leaders do not restrict them too much.  Another concept which I like, is a more permanent version ... in Times Square they have put food businesses in refurbished  container boxes, which is a tremendous draw for both workers and sightseers.  Jax Truckies are off to a great start, wish them the best and hope to see it expand in Jax.
